Da Nang's signature dish is mi quang, a turmeric noodle served with a little broth, peanuts and a rice cracker; the usual toppings are pork, shrimp, chicken or egg, and there is a snakehead-fish version, so it is not vegetarian unless made specially. Other local dishes include banh xeo (crisp pancakes), bun cha ca (fish noodle soup), bun mam and bun bo Hue, all of which use meat, fish or fermented fish sauce. Vegetarian travellers should look for signs reading 'quan chay' or 'com chay', which mark Buddhist vegetarian restaurants. HappyCow lists several vegan places, and we verified four: Nha Hang Chay Tathata (vegan Vietnamese), Chickpea Eatery (plant-based Vietnamese and Western), Kurumi Vegan Cafe and Roots Plant-Based Cafe. We did not find a verified Indian restaurant or Jain kitchen, so ask your hotel in advance; some can arrange simple vegetarian meals, and you can ask for dishes without onion or garlic, though a Jain guarantee is unrealistic. Always say 'no fish sauce' (khong nuoc mam) and 'no meat stock', as sauces and broths often contain them.
